Big bowls of soup, and ramen noodles with a pedigree, are now available to cook at home from Ramen Lab, the Lower East Side brand owned by Sun Noodle, a wholesale supplier, and the name of their now-closed restaurant. The company has enlisted chefs from five New York-area restaurants to create different ramen, sold frozen and ready to heat and serve in minutes. The participants are Nakamura, Ivan Ramen and Ramen Lab in Manhattan; Za-Ya Ramen in Brooklyn; and Ani Ramen, with several locations in New Jersey. The broths, nicely populated with other ingredients, are rich and complex, but adding a few other items, like fresh greens, scallions, mushrooms or eggs, would not be a mistake.
